The fall weather has finally arrived and I’m so ready for some soup. I’ve talked about my aversion to canned so I try to keep it homemade.
Besides being miserable with my allergies (I was up all night sneezing), that wonderful post nasal drip has given me a brutal sore throat.
So I say… Let them eat soup! Me to be exact.
Quickie Chicken Soup
1 red onion, chopped
3 large garlic cloves, minced
1 tomato, diced
a pinch of red crushed pepper
a good sprinkle of Italian Seasonings
salt & pepper to taste
extra virgin olive oil – about a tablespoon or two
1/4 – 1/2 cup white wine
1 bag of mixed vegetables
1/2 package of grilled, pre-cooked roast diced chicken from a 1 3/4 lb bag
6 cups chicken broth
1/2 lb small pasta, cooked separately – al dente
Heat a stockpot over high heat. Add olive oil. Once warmed add onions, garlic, crushed pepper and Italian Seasonings. Cook until onions are translucent.
Add tomatoes and season with salt and pepper. Cook for a minute or two then add wine. Cook on high until wine starts to evaporate. Add vegetables, stir and season with salt and pepper. Add chicken and stir.
Pour in chicken broth and bring to a boil. Lower to a simmer and cook until chicken is warmed through. Adjust seasonings and add Reggiano. Stir and serve poured over pasta in deep bowls.
